Tonight I made some meatloaf – cheesy, bacon, bbq smoked meatloaf!

Ingredients:
– 2lbs 80/20 ground beef
– 1lb ground pork
– 1/2 yellow onion, diced
– 1/2 cup bacon, cut up
– 2 cups break crumbs
– 3 fresh eggs
– choice of bbq rub
– choice of bbq sauce
– package of mozzarella cheese
– 1/2 cup brown sugar

Directions:
– cook up the bacon and onions on your griddle or in a frying pan – let cool 30 mins
– Mix the ingredients in a large bowl
– Pack the mixture into two regular sized loaf pans
– Sit in fridge for at least 1hr to harden up
– Cook on your smoker at 275-200 degrees (F) until 140(F) internal temp
– Glaze with your favorite BBQ sauce
– Continue to cook until internal temp is 160(F)
– Let rest 10-15 minutes
– Slice and enjoy!
