Today I made some Corn Crabmeat Cheddar Fritters!

WET INGREDIENTS
1/2 Cup of Cooked Corn
1 1/2 Cup of Lump Blue Crab
2 Eggs
1 Tablespoon of Fresh Parsley, chopped
1/3 Cup of Milk
1 Cup of Cheddar Cheese, shredded

DRY INGREDIENTS
3/4 Cup of Flour
2 Teaspoons of Baking Powder
2 Teaspoons of Old Bay Seasoning

Mix together the wet ingredients into a mixing bowl. Then, mix in the dry ingredients until everything is happy. Pop in the fridge for 3-4 hours to set.

Fire up the griddle to med-low heat, add oil and place small piles of your mix. Flatten them down a bit to create little patties.

Let cook until golden brown and then flip and cook the other side.
